To reminisce, my wonderful wife made for me upon request one of my favorite main dishes: boiled (yes, boiled) bone-in pork chops. My paternal grandmother, whose parents were from Austria and Switzerland, often made this delicious dish when I was a kid in the 1960s and 1970s. My father's sister has also often made it.
