Giambotta

This mid-afternoon, my wonderful wife made one of my favorite Italian concoctions: Giambotta (Ciambotta). It's basically bell peppers, eggplant, onions, and tomatoes, all diced and sliced, sautéed in olive oil. It sometimes contains zucchini. She added dried basil, ground black pepper, garlic powder, and a tiny bit of sugar.

I loved my Italian grandmother's version when I was a kid in the 1960s and 1970s, and also in the 1980s. I love it cold, directly out of the refrigerator, with Italian bread. I also like it on a sausage hero sandwich. It's good over pasta.
